Description:     Spicy fragrant flowers once used to flavor ale's and wine. Fragrance is valuable in potpourris and herb sachets.

Clove pink syrup can be made by infusing the petals in hot sugar syrup. Use syrup on fruit salads or to sweeten drinks.   


                                    ECHINACEA
The Native Americans are credited with discovering the many uses of Echinacea. They used all parts of the plant to treat everything from poisonous bites to burns. They added the juice to water to sprinkle on coals during traditional "sweats" taken for purification purposes. Used as a blood purifier as well as an antibiotic. Proven immune system stimulant; it increases white blood cells. It is useful to guard against both viral and bacterial infections, but use fell by the wayside in the 1930's with the advent of new and improved anti-infective agents. If you’re not interested in healing yourself naturally, simply enjoy the beauty of all varieties of the coneflower in the landscape. Butterflies are particularly interested in this species.

                        HERB INFUSED OILS
Coarsely grind dried herbs in a blender, place them in a wide mouth jar and add enough oil to cover. Keep in a warm place and shake daily. After 2 weeks, strain the oil, squeeze two vitamin E capsules (500 mg) into the strained oil, and mix. LABEL and store in a dark place. Do not take internally.

Equisetum hyemale

Description:     Horsetails are among the oldest of all plants; they once grew to tree heights in prehistoric days. It has unusual reed-like hollow jointed stems with a very high silica content, making it useful as an abrasive similar to that of a fine emery cloth. Collect the leafless stems, dry briefly in the sun and tie them in bundles. Used to shine metal pans or give wood a final sanding. Also used as excellent fungicide for both plants and people suffering from athletics' foot and jock itch. Leaves are very unique, similar to twigs and are a unique touch in dried flower arrangements. Likes to be planted in boggy wet places, but will do well in any type of soil.

                             FENNEL FACE PACKS
Fennel herb cleanses, stimulates and smoothes out wrinkles. Chop fennel leaves and add to plain yogurt. Spread on face, avoiding eyes. Leave on for 15 minutes; rinse with lukewarm water. Use for once a week for beneficial results.

Description:     Large panicles of white fragrant flowers in late spring and summer. The leaves are fragrant and are used as strewing herbs and for flavoring wine and beer. A tea of the leaves is said to be a pleasant drink and was taken for fevers, aches and as an herbal aspirin substitute. Likes compost rich soil. Roots produce a black dye.

Description:     Lovely deep purple airy fern-like foliage used in fish dishes and sauces with a very mild licorice flavor. Use fennel leaves and seeds in deserts breads and beverages. My grandmother’s spaghetti sauce always contained fennel seeds. Historically, fennel was used by nursing mothers to increase milk flow and to relieve infant colic. An appetite stimulant, it also soothes upset stomachs. Was used externally to treat muscular pain. To the medieval mind, fennel was one of the nine sacred herbs with the power to cure diseases and was placed in windows and doors to keep out evil spirits. Butterfly host plant for the swallowtail so plant a few extra for our flying friends.
